330 ml Margarita Glasses: A Measured Serve with Room for Ice

Build a 105 ml margarita base for the Novatex 330 ml glass, then trial your ice portion to keep the finished serve below the rim.
By Atmar Horeca team
Build around the glass, not a brim-full pour
Your 330 ml margarita glass needs to accommodate the cocktail, ice and garnish, not just the measured liquid ingredients. Start with a 105 ml base, then establish an ice portion that keeps the finished serve visibly below the wide rim.
For your bar team, the useful standard is a complete serve rather than a liquid measure alone. Specify the recipe, serving ice, partial salted edge and small lime garnish together. Target no more than 250 ml including ice, and confirm the presentation in the actual glass before service.
Know the two-level bowl
The Novatex margarita-style cocktail glass has a wide, shallow upper bowl above a smaller lower bowl. Its wide rim takes a salted or sugared edge and fruit garnishes. For this recipe, use only part of that edge and leave the rest clear.
The glass is made from clear AS plastic and is supplied in packs of six. Its stated uses include margaritas, frozen cocktails and fruit drinks at pool bars, beach bars, terraces and events. Keep this iced recipe as its own service specification rather than using the same fill instruction for every drink.

Measure one 105 ml margarita base
Use the following quantities for one trial serve. The four liquid ingredients total 105 ml before shaking; that is not the finished drink volume. Treat the serving-ice quantity below as a starting portion to verify, not a guaranteed fill level.
- 50 ml tequila
- 25 ml triple sec
- 25 ml lime juice
- 5 ml sugar syrup
- 100 g ice for shaking, discarded after straining
- 60 g fresh serving ice as an initial trial portion, adjusted after the fill check
- 1 small lime wedge for moistening the rim and garnishing
- 1 small pinch of salt for part of the rim
Keep the liquid measures fixed while you trial the serving ice. If the finished presentation sits too high, revise the ice portion rather than changing several parts of the recipe at once. Record the approved ice weight beside the four liquid measures.
Salt, shake, strain and garnish
- Moisten a short section of the outside rim with the lime wedge. Apply the pinch of salt to that section only, leaving the remaining rim clear.
- Weigh 60 g of fresh serving ice for the initial trial and place it in the glass. For subsequent serves, use the portion approved by your fill check.
- Measure 50 ml tequila, 25 ml triple sec, 25 ml lime juice and 5 ml sugar syrup into your shaker.
- Add the 100 g of shaking ice and shake the mixture.
- Strain the cocktail over the fresh serving ice, leaving the shaking ice behind. Check that the finished fill stays below your trial reference and visibly below the rim.
- Add the small lime wedge to the rim without crowding the salted section. Check the complete presentation before passing the drink to service.
Tip: Approve the ice portion in the actual glass, then put that weight on your recipe card alongside the 105 ml base.
Trial the finished fill at no more than 250 ml
Before preparing the trial drink, measure 250 ml of water into a separate, identical glass on a level counter. Use its waterline as a visual reference for your maximum finished fill. Empty that reference glass afterwards; it is a checking step, not part of the recipe.
Make the complete margarita and compare the liquid level and ice position against the reference. Keep both below that level and ensure the drink remains visibly below the wide rim. If either sits too high, repeat with less serving ice and record the revised weight.
Do not approve the serve from the 105 ml base alone. Check it after shaking, straining and garnishing, with the ice you will actually use at your station. Repeat the trial if you change that ice, rather than assuming the previous portion will present identically.
Set out lime garnishes and salt
Use the 14 × 8.5 × H2.5 cm rectangular bowl as a station dish for your lime garnishes, not as a rim-dipping tray.
Set a small quantity of salt in the Ø11 cm, 225 ml round bowl and apply it by pinching onto the moistened rim section. Do not dip the glass rim into this bowl.
Keep your approved recipe card at the station with the liquid measures, serving-ice weight and partial-rim instruction together, so your team has one complete reference.
